Salmon With Mango Salsa
This is an easy salmon recipe that is sure to wow your family or guests. The recipe calls for 1-2-pound skinless salmon filet. I used 6 precut salmon filets.
Ingredients for Salmon
1-2 pounds skinless salmon filets
2 Tablespoons smoked paprika
1 Teaspoon Kosher salt
1 Teaspoon black pepper
½ Teaspoon cayenne pepper
½ Teaspoon garlic powder
½ Cup of honey
2 Tablespoons apple cider vinegar
Ingredients for Mango Salsa
1 large ripe mango chopped (can substitute 2 ½ cups of frozen mango if needed)
½ red onion
1 jalapeno (seeded, unless you want your salsa to have some heat)
Juice of 2 limes
Chopped fresh cilantro
Preheat oven to 450 degrees
Generously spread olive oil on a large heavy-duty piece of aluminum foil. The foil needs to be big enough to cover and seal salmon tightly.
Mix all spices together and rub on top and bottom of salmon and place salmon on aluminum foil.
Mix honey and vinegar together and drizzle over salmon.
Wrap salmon tightly in foil. Place on baking sheet and place in oven for about 15 minutes. Salmon is well done when it flakes easily, and internal temperature is 145 degrees.
Mix all ingredients for salsa. The salsa can be made ahead of time and is actually better the longer it chills.
Remove salmon from oven and uncover. Be careful, it will be steamy.
Cut salmon into six filets and place on six plates. Top with desired amount of salsa.
